She was born in Canton, to Edris and Evelyn (Watson) Thomas. They preceded her in death as well as an infant daughter, Jennifer Jo, one brother, Jim Thomas, and brother-in-law Gordon Horras.
Vicki first married Gregory D. Sims. He survives and later married, George Hoke, he preceded her in death.
Vicki is survived by her son Gregory Allen (Kim) Sims, three grandchildren who she cherished dearly, Dylan (Briana) Sims, Austin (Kenzie) Sims, and Taylor (Nick) Eisenbarth, three great grandchildren, who brought great joy to her, Owen Huffman, and Baylor and Traycen Sims, her sister Sheila Horras, sister-in-law, Jeanne Graham, and several nieces nephews, and great nieces and nephews. She was grateful for her nephew Kenneth Thomas always being there when she needed help.
Vicki attended St. David middle school, and later graduated from Lewistown High School. She received her Associates Degree from Spoon River College in Canton.
She first worked at the bank in Lewistown. She then worked at the Fulton County Courthouse, and later worked as administrator at Farmington Country Manor and then as administrator at Clayberg Nursing Home in Cuba. Following working at Clayberg Vicki and her business partner Kathy Eskridge built Hoke Ridge Estates Assisted Living Facility in Canton (currently Red Oak Estates). Vicki was co-Owner and worked as the Administrator. She was on the Fulton County Board for several years. She was also a board member of the Illinois Department on Aging.
Many will know her for her great love and compassion for her animals and all animals that wondered into her life. Vicki loved her small farm she had in Smithfield. She was always there to help anyone who needed it.

A visitation will be held on Friday, March 21, 2025 from 4:00 p.m. until 6:00 p.m. at Oaks-Hines Funeral Home. A funeral service will be held at 6:00 p.m. at the funeral home.
Following the services cremation rites will be accorded.
